Wow everyone at the party with this amazing flavor combo. Chipotle sauce keeps it spicy; Smart Balance® Light Mayonnaise Dressing keeps it lower in calories.
2 sweet potatoes (14 oz) peeled and cut into 1/4-inch thick fries
2 tbsp Smart Balance® Cooking Oil
salt and pepper to taste
For the chipotle mayonnaise:
1/4 cup Smart Balance® Light Mayonnaise Dressing
1 tbsp chipotle en adobo sauce
1 tsp fresh lime juice
Preheat oven to 425°.
In a medium bowl, toss sweet potatoes with Smart Balance® Cooking Oil, salt and pepper.
Spread potatoes on a baking sheet. Bake 15 minutes; turn and bake an additional 10 to 15 minutes, or until golden.
Meanwhile, combine Smart Balance® Light Mayonnaise Dressing with chipotle en adobo sauce and lime juice, and place in a bowl for dipping.
Makes 2 servings.
