Fresh vegetables make this heart-healthier stir-fry sizzle.
1 lb chicken breast, thinly sliced
2 tbsp Smart Balance® Cooking Oil
2 tbsp minced garlic
2 tbsp grated ginger
1 cup snow peas, trimmed
1 cup carrots, sliced thin
1 tbsp low-sodium soy sauce
2 tbsp fresh lime juice
scallions for garnish
Heat a wok over high heat. Add half the Smart Balance® Cooking Oil and the chicken. Stir-fry, stirring occasionally, until the chicken is cooked through, about 3-4 minutes. With a slotted spoon, remove the chicken and set aside. Reduce heat to medium.
Add the remaining Smart Balance® Cooking Oil to the wok; add the garlic and ginger, stir for 20 seconds. Add the snow peas and carrots, stirring over medium high heat until tender and crisp, about 3-4 minutes.
Return the chicken to the wok, add the scallions, lime juice and soy sauce and remove from heat.
