Peanut Butter Pecan Balls with coconut dipped in Dark Chocolate
1 cup melted Smart Balance Light Original Buttery Spread
1/2 cup Smart Balance Creamy Peanut Butter
3 cups crushed graham crackers (12 full crackers)
3 cups powdered sugar
1/2 cup coconut (optional)
1 1/2 cups finely chopped pecans
20 ounces Dark Chocolate (at least 60% cacao) melted in double boiler
Combine all ingredients EXCEPT chocolate, stir, cover and refrigerate at least 2 hours till batter is firm
Form batter into balls using about 1 Tablespoon of dough per ball. Refrigerate balls as they are formed
Dip balls into melted chocolate, remove with a sturdy toothpick or skewer, cool in refrigerator on nonstick baking sheet until firm
Makes 50 cookies (1 cookie per serving).
