1/3 cup Smart Balance® Light Mayonnaise Dressing
1/2 tsp Dijon mustard
1 tsp white vinegar
4 cups shredded cabbage (not packed), either green or purple or both
1/2 cup shredded carrot
1 scallion, thinly sliced
pinch of salt
fresh pepper to taste
Mix mayonnaise, mustard and vinegar together.
Mix in with the cabbage, carrot, and scallions. Adjust salt pepper to taste.
Makes 6 servings.
