These vegan buffalo bites are what I turn to when I crave my favorite food from before I stopped eating meat, buffalo wings. They are perfect served with celery sticks and the Non-Dairy Ranch Dressing also posted here.
1/2 pound extra firm tofu
2/3 cup vegetable broth
2 Tablespoons soy sauce
1 teaspoon garlic powder
pepper to taste
1/2 cup panko bread crumbs
1/4 teaspoon salt
pepper to taste
1/2 teaspoon paprika
2 Tablespoon flour
1/4 cup Organic Smart Balance buttery spread
1/8 – 1/4 cup hot sauce
Drain the tofu and press it between clean dishtowels or paper towels. I place a heavy cast iron pan on top of mine to really press out all the liquid. Sometimes for an even meatier texture I freeze the tofu after pressing it and then let it thaw out.
Cut the tofu into bite sizes pieces. I like to make them between 1/4 and 1/2 inch thick.
Once the tofu has been pressed prepare the marinade by mixing the vegetable broth, soy sauce, garlic powder, and pepper together in a container. Add the tofu and allow it to marinade for as long as you can but at least an hour.
After the tofu has marinated preheat the oven to 350 degrees.
In a small bowl mix the flour and 3 Tablespoons of the marinade you used with the tofu. In a separate shallow dish combine the bread crumbs, salt, pepper, and paprika.
Trying your best to keep one hand “wet” and one hand “dry” dip the tofu into the flour-marinade mixture and then into the bread crumbs pressing gently to make sure the crumbs stick to the tofu.
Once breaded place on a lightly greased baking pan and bake for 30 minutes turning over half way through.
Once the tofu is removed from the oven melt the butter in a small bowl in the microwave and mix in the hot sauce adding more hot sauce if you want the bites to be spicier.
