2 pink grapefruits, peeled and segmented
1 Hass avocado, sliced
8 oz mixed baby greens
8 thin slices red onion
3 tbsp Smart Balance® Cooking Oil
1 1/2 tbsp white balsamic vinegar
2 tbsp chopped shallots
salt and freshly ground pepper to taste
Segment the grapefruit, by slicing away the peel and the white membrane. Cut along the inside of the membrane to separate the pieces and set aside.
In a medium bowl, whisk together Smart Balance® Cooking Oil, white balsamic vinegar, chopped shallots, and salt and pepper.
Divide the baby greens evenly between four plates. Arrange avocado and grapefruit slices on each plate, top with red onion and drizzle with vinaigrette.
