Smart Balance Omega Non Stick Cooking Spray
20 oz chopped frozen spinach, thawed and drained
2 green onions, thinly sliced
½ cup fresh parsley, chopped
¼ cup fresh dill, chopped
1 tbsp minced garlic
¼ tsp salt
¼ tsp pepper
Pinch of nutmeg
Zest of a lemon
Juice of a lemon
½ lb feta cheese, crumbled
2 large eggs, beaten
12 egg roll wrappers
Preheat the oven to 400 degrees. Spray a baking sheet with the cooking spray.
In a mixing bowl, combine the remaining ingredients, except the egg roll wrappers, and mix until well combined.
On a clean work surface, fill each egg roll wrapper with approximately 2 tbsp of the spinach mixture. Wrap according to the directions on the package.
Place the egg rolls, seam side down, on the baking sheet. Spray the tops with the cooking spray.
Bake for 12 minutes until lightly browned.
Serve with Tzatziki Sauce, if desired.
