Smart Peanut Butter Balls (no-bake recipe)
2 containers of Smart Balance peanut butter (one creamy, one chunky),
1 cup coconut flakes,
1/2 cup semi-sweet mini chocolate chips,
3 cups powdered sugar (1 cup for mixing, 2 cups in a bowl),
1 teaspoon pure vanilla,
1 tablespoon local honey,
1 cup quick oats (up to 2 cups),
1/2 cup walnuts, crushed
1. Mix all ingredients (except 2 cups powdered sugar) in a large mixing bowl.
2. Shape into tight balls (slowly add more quick oats if the balls seem too soft)
3. Roll balls through the bowl of powdered sugar until completely covered
4. Enjoy within 72 hours with a cup of Smart Balance milk. Keep tightly lidded.
