A delicious, refreshing Shrimp Macaroni Salad to enjoy for cookouts or lunch & dinner all year round!
1 lb. of shrimp (steamed)
2 stalks of celery
2 carrots shredded
1/4 cup onion (optional)
2 tablespoons of Old Bay
1 lb. of Pasta (macaroni or shells or Penne) – Cook as directed
1/2 cup Smart Balance Mayonnaise (add more depending on taste)
In a bowl cut celery in small pieces, shred carrots (with a cheese grater).
If you use onion chop in small pieces. Cut shrimp into small pieces. Add 2 tablespoons of Old Bay.
Add Pasta. Mix all of the above ingredients together. Add Smart Balance Mayonnaise.
