Everyone loves a second helping of meatballs. So we’ve gone out of our way to create a healthier version of this Italian classic—with lean ground turkey and an herb-infused tomato sauce.
This recipe is part of our Slow Cooker Classics recipe special.
For the meatballs:
20 oz 93% lean ground turkey
1/4 cup breadcrumbs
1/4 cup grated parmesan cheese
1/4 cup basil, minced
2 tbsp Smart Balance® Cooking Oil
1 large egg
1 large clove garlic, crushed
3/4 tsp kosher salt
fresh black pepper, to taste
For the sauce:
28 oz cans crushed tomatoes
2 cloves crushed garlic
1 small sprig of fresh oregano
salt and fresh pepper, to taste
1/4 cup fresh chopped basil
In a large bowl, combine ground turkey, breadcrumbs, parmesan cheese, basil, oil, egg, garlic, salt and pepper. Gently mix all the ingredients and form into small meatballs, about 2 tablespoons each.
Place the crushed tomatoes, garlic and sprig of fresh oregano in the slow cooker.
Gently drop the meatballs into the sauce, cover and set slow cooker to low, 6 hours. When meatballs are done, adjust salt and pepper to taste and add fresh chopped basil. Serve over pasta or with Italian bread on the side.
Makes 6 servings. 4 meatballs and about 1/2 cup sauce per serving.
