Recipe Ingredients

5 tsp Smart Balance® Cooking Oil
8 oz medium shrimp, peeled and deveined
1 large egg, beaten
2 large egg whites, beaten
8 scallions, chopped
2 cloves garlic, minced
1 tbsp freshly grated ginger
4 cups cooked quinoa (cooked according to package directions)
1 1/2 cups frozen peas and carrots
1 1/2 tbsp low-sodium soy sauce

Recipe Steps

Heat a nonstick wok on high heat. When hot, add 1 tsp Smart Balance® Cooking Oil and add the shrimp. Cook until no longer translucent, about 1 1/2 minutes, and set aside.

Add another teaspoon of Smart Balance® Cooking Oil to the wok and gently add the large eggs; cook about 1-2 minutes or until the eggs begin to set.
Use a spatula to break the eggs into small pieces and set aside with the shrimp.

Add the remaining Smart Balance® Cooking Oil, scallions, garlic and ginger; sauté about a minute. Stir in the quinoa, peas and carrots.

Add soy sauce, stir to mix all the ingredients and cook 5-6 minutes. Add the shrimp and eggs back to wok. Toss and adjust soy sauce, if needed, to taste and mix well another 30 seconds.
