3/4 c. pureed pumpkin
1/2 c. smart balance light with flax oil
1 tsp. vanilla
2 c. whole wheat flour
1 tsp. cinnamon
1/2 tsp. ground ginger
1/2 tsp. pumpkin pie spice
1/2 tsp. nutmeg
1/2 tsp. baking soda
3/4 c. diced apple
1 tbsp. agave syrup
beat pumpkin, softened butter and vanilla.
in separate bowl, mix flour, spices and soda.
add dry ingredients to pumpkin mixture, and stir in apple and agave.
bake for 12 – 15 mins at 350 F.
Makes 12 – 18 servings.
