This pretzel-encrusted baked chicken nuggets recipe is a sure hit as a party appetizer or a ballgame snack!

Recipe Ingredients

16 oz boneless chicken breasts, cut into even bite sized pieces
salt and pepper to taste
1 tbsp Smart Balance® Cooking Oil
3/4 cup crushed thick, hard honey mustard pretzels
Smart Balance® Omega Non-Stick Cooking Spray

Recipe Steps

Preheat oven to 425°. Spray a baking sheet with Smart Balance® Omega Non-Stick Cooking Spray

In a food processor, pulse the pretzels until coarsely
ground; you should have coarse chunks and fine crumbs. Transfer to a large, shallow bowl. Put the Smart Balance® Cooking Oil in another bowl.

Season chicken with salt and pepper, then place in the bowl with the Smart Balance® Cooking Oil and mix well, evenly covering the chicken with oil.

Put a few chunks of chicken at a time into the pretzel mixture to coat, and then place on the baking sheet. Spray the Smart Balance® Omega Non-Stick Cooking Spray lightly over the chicken, and then bake 10 minutes.

Turn over, then cook another 4-5 minutes or until cooked though.
