Recipe Ingredients

4 large eggs, hardboiled, peeled and chopped
2 tablespoons Sour Cream
2 tablespoons Smart Balance® Omega Plus™ Light Mayonnaise
3 tablespoons sweet pickle relish
1/4 teaspoon black pepper
1/4 teaspoon salt
1/2 cup thinly sliced celery
1/4 cup finely chopped green onion

Recipe Steps

Place large eggs in a medium saucepan, add enough cold water to cover eggs completely. Bring to a boil over high heat, reduce heat, and simmer, uncovered, 10 minutes. Remove from water and let stand 2 minutes before peeling under cold running water. Chop coarsely.

Combine the eggs, Sour Cream, Smart Balance® Omega Plus™ Light Mayonnaise, black pepper, salt, and cayenne in a medium bowl, mashing some of the egg yolks while stirring. Stir in the remaining ingredients.
