Recipe Ingredients

3 cups flour
1 ¾ cup sugar, divided
1 cup brown sugar
1 tsp baking soda
½ tsp salt
4 large eggs, divided
¾ cup Smart Balance Omega Oil
2 tbsp amaretto
¾ cup milk
Zest of an orange
2 tsp vanilla extract
15 oz part skim ricotta cheese
½ cup mini chocolate chip

Recipe Steps

Butter and flour bundt pan. Preheat oven to 350.

In a mixing bowl, stir together flour, 1 cup sugar, brown sugar, baking soda, and salt.

Add 3 eggs, oil, amaretto, milk, and orange zest and stir by hand just until ingredients are moistened.

In a separate bowl, mix together the remaining ¾ cup sugar, egg, vanilla, ricotta and chocolate chips.

Pour the half of the cake batter into the prepared pan. Spoon half of the ricotta mixture on top. Repeat with the other half. With a butter knife, swirl the batters together.

Bake for 80 minutes, or until a wooden pick inserted comes clean.

Cool the cake in the pan for 10 minutes, and then transfer to a serving plate. Cool completely.
