Recipe Ingredients

1 cup cubed cooked chicken breast
3/4 cup seedless grapes, halved
1/2 cup chopped celery
Fresh ground pepper
2 tablespoons Smart Balance Omega Plus Light Mayonnaise
1 teaspoon yellow mustard
1 teaspoon Dijon mustard
2 teaspoons honey
Splash of lemon juice
3 cups your choice of lettuce
1/4 cup cheese crumbles
2 tablespoons chopped walnuts
Croutons, if desired

Recipe Steps

In a small bowl, combine the mayonnaise, yellow mustard, Dijon mustard, honey and lemon juice. Whisk well to combine.

To the dressing mixture add chicken, grapes, celery, and fresh ground pepper to taste. Toss to coat.

Divide lettuce between two plates. Top with chicken mixture.

Top the salads with cheese crumbles, nuts, and croutons if desired. Serve immediately.
