Centuries before Italians fell in love with pasta, Roman centurions dined on farro. Hearty grains, healthy asparagus, garlic and parsley are key to this Tuscan classic.

Recipe Ingredients

3/4 cup pearled farro
3 tbsp Smart Balance® Buttery Spread
1 bunch asparagus, tough ends trimmed
2 cloves garlic, chopped
1 tbsp fresh lemon juice
2 tbsp minced fresh parsley
kosher salt and black pepper, to taste

Recipe Steps

Cook the farro in salted water according to package directions and set aside. Cut the asparagus into 1/2 inch pieces. Next, melt the butter in a large skillet over medium heat; add the asparagus and cook until soft, about 4 to 5 minutes. Then, add the garlic and toss for 1 to 2 minutes more. Finally, add the cooked farro to the pan and combine. Remove from the heat and finish with the lemon juice and parsley. Season with salt and pepper, to taste.
