Recipe Ingredients

2 cups zucchini (slices)
1 dozen large eggs (beaten)
2 cups grated mozzarella cheese (low-fat or regular)
1 8oz jar marinara sauce
1 bunch fresh basil, chopped
1 teaspoon Smart Balance® Cooking Oil

Recipe Steps

Sauté zucchini in Smart Balance® Cooking Oil for 4–5 minutes.

Add eggs and cheese.

Cook, stirring until eggs are almost cooked; add marinara sauce and basil, continuing to cook for 1 minute.

Serve hot with garlic bread.
