Recipe Ingredients

3 tablespoons Smart Balance® Omega Plus™ Light Mayonnaise
1 1/2 tablespoons sweet pickle relish
4 large eggs, peeled and chopped
3/4 cup thinly sliced celery
8 lettuce leaves
4 whole wheat pitas, cut in half

Recipe Steps

Combine the Smart Balance® Omega Plus™ Light Mayonnaise, relish, 1/8 teaspoon salt and 1/8 teaspoon black pepper in a medium bowl. Stir in the eggs and celery.

Warm the pitas according to directions on the package. Line each pita half with a lettuce leaf, and spoon equal amounts of the egg salad in each.

Cook’s Tip
To cook Smart Balance™ Omega-3 Grade A Natural Large Eggs, cover with cold water in a medium saucepan. Bring to a boil over high heat, reduce heat and simmer 10 minutes. Drain, run under cold water one minute for easy peeling.
