This salad’s such a cinch, we put “Easy” in the name! Prepare the spicy bean mix ahead of time, then add the shrimp and avocado when company comes over.
1/3 cup red onion, finely chopped
kosher salt, to taste
2 tbsp Smart Balance® Cooking Oil
1/4 cup fresh lime juice
2 cans (each 15 1/2 oz) black beans, rinsed and drained
2 1/2 tbsp minced jalapeño
1/3 cup chopped fresh cilantro
1/2 tsp dried oregano
1 tsp ground cumin
1 lb cooked medium shrimp, peeled and deveined, diced 1-inch
2 ripe avocados, diced 1-inch
Put the chopped onion in a small bowl and season with salt, add the oil and the lime juice and set aside.
In a large bowl combine the beans with the jalapeño, cilantro, oregano, cumin and salt. Drizzle the lime mixture over the beans and refrigerate until ready to serve.
Just before serving, gently mix in the shrimp and avocado, adjust the salt to taste and serve immediately.
Makes 6 servings. 1 generous cup per serving.
