Recipe Ingredients

3-1/2 C. flour, unsifted
1-1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. ground nutmeg
1 C. Smart Balance Buttery Spread Original
8 oz. package lo-fat cream cheese
1 cup sugar or sugar substitute suitable for baking
1-1/2 tsp. vanilla
1 large egg
1 tsp. flavoring of choice if desired (such as lemon, cherry, or orange)
Cinnamon sugar (1/4 C. sugar plus 1 tsp. cinnamon) or colored baking sprinkles

Recipe Steps

Combine first 4 dry ingredients in a bowl; set aside.

Cream Smart Balance for about 3 minutes on high speed in mixer. Add cream cheese and beat on low speed until creamy and smooth.

Add sugar or sugar substitute; beat on low speed until smooth. Blend in vanilla, large egg and mix well. Blend in flavoring of choice. Add flour mixture about 1/2 cup at a time, beating at medium speed of mixer until well blended.

Preheat oven to 350 degrees F.

On a lightly floured surface or on a floured pastry cloth, roll dough 1/8-inch thick. Cut with cookie cutters of choice, place on un-greased baking sheet.

Cookies are very good plain, but if desired, sprinkle with cinnamon-sugar or colored baking sprinkles.

Bake for 7 minutes, then rotate cookie sheet so back is to front, and bake 4 minutes more, until lightly browned on edges. Makes 75 to 90 cookies, depending on thickness of cookie.
