Recipe Ingredients

Smart Balance® Omega Non-Stick Spray
6 tbsp Smart Balance® Butter & Canola Oil Blend, softened
1/2 cup honey
2 large eggs
1 1/3 cup 1% buttermilk
1/2 tsp baking soda
1 cup cornmeal
1 cup all-purpose flour
1/4 teaspoon salt

Recipe Steps

Preheat oven to 375°. Grease a muffin tin with Smart Balance® Omega-3 Non-Stick Spray.

Beat soft butter and honey together, add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture. Stir in cornmeal, flour and salt until well blended and few lumps remain. Pour batter into the prepared pan.

Bake in the preheated oven for 20 to 22 minutes or until a toothpick inserted in the center comes out clean.
