New twist on an old favorite. Fluffy peanut butter filling and banana sandwiched between slices of chocolate cake.
1/2 cup cake flour
1/3 cup unsweetened cocoa
1/4 tsp. baking soda
1/4 tsp. baking powder
2/3 cup sugar
1/4 cup Smart Balance Buttery Spread
2 large eggs
1/2 cup sour cream
1 Tblsp. vanilla extract
1/2 cup Smart Balance creamy peanut butter
1-1/2 Tblsp. Smart Balance Buttery Spread
1/2 cup confectioner’s sugar
Line the bottom of an 8.5 x 4.5 loaf pan with parchment paper. Lightly grease and flour the paper and sides of the pan. Preheat oven to 350 deg.
Combine flour, cocoa, baking soda, and baking powder.
In electric mixer, beat sugar and buttery spread until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in sour cream and vanilla. On low speed mix in the dry ingredients just until combined.
Pour batter into loaf pan. Bake 35 to 40 minutes until cake tester in center comes out clean. Cool on wire rack.
To make filling, beat peanut butter with the 1-1/2 Tblsp. buttery spread. Gradually add the confectioner’s sugar and beat until fluffy about 2 or 3 minutes.
When the cake is cold, slice into thin slices. Spread about 1 Tblsp. filling on half the slices. Place 2 thick slices of banana on each “buttered” slice. Top with the remaining slices. Cut each sandwich in half and serve immediately with a large cold glass of Smart Balance Milk.
