Recipe Ingredients

For the sliders:
20 oz 93% ground turkey
1/4 cup seasoned breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup parsley, minced
1 tbsp Smart Balance® Cooking Oil
1 large egg
1 large clove garlic, crushed
fresh pepper, to taste
2 tbsp Smart Balance® Cooking Oil

For the slaw:
2 1/2 cups shredded coleslaw mix
2 scallions, sliced
2 tbsp Smart Balance® Light Mayonnaise Dressing
1 tbsp Smart Balance® Cooking Oil
1 tbsp cider vinegar
1/8 tsp celery seed
fresh pepper, to taste

For the final preparation:
3/4 cup low sodium BBQ Sauce
24 small soft dinner rolls or slider buns, split

Recipe Steps

In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, 1 tablespoon Smart Balance® Cooking Oil, egg, garlic and pepper. Gently mix all the ingredients and form into small meatballs, about 2 tablespoons each.

In a large skillet, heat 2 tablespoons of Smart Balance® Cooking Oil over medium heat. Add the meatballs and brown on all sides until cooked through.

Meanwhile combine all the slaw ingredients in a large bowl and set aside.

Toss the meatballs with the low sodium barbecue sauce. Dividing evenly, top the rolls with the meatballs and slaw.

Makes 24 meatballs.
