A delicious way to use up all the zucchini from your garden!
6 large zucchinis
¼ cup Smart Balance Omega Oil
¼ cup dry white wine
2 tbsp minced garlic
1 tbsp lemon juice
1 tsp salt
½ tsp pepper
2 cups marinara sauce
1 lb. fresh mozzarella, thinly sliced
1 tsp dried basil
2 tbsp parmesan cheese
10 minutes
45 minutes

STEP 1: |

Preheat oven to 400 degrees. |

Slice the zucchinis into ¼ inch rounds and put into a large mixing bowl. |

Add the oil, wine, garlic, lemon juice, salt and pepper. Toss well. |
|

|
Arrange ½ of the zucchini evenly in a 13x9 baking dish. Top with ½ of the sauce and then ½ of the mozzarella cheese. Repeat for second layer. |

Add any of the remaining juices from the bowl evenly over the zucchini. |

Sprinkle top with the basil and parmesan cheese. |

Bake, covered, for 35 minutes and then uncovered for an additional 10 minutes. Enjoy as a side dish or main meal with a salad or over pasta. |
