Zucchini Parmesan

A delicious way to use up all the zucchini from your garden!

Ingredients: 

6 large zucchinis
¼ cup Smart Balance Omega Oil
¼ cup dry white wine
2 tbsp minced garlic
1 tbsp lemon juice
1 tsp salt
½ tsp pepper
2 cups marinara sauce
1 lb. fresh mozzarella, thinly sliced
1 tsp dried basil
2 tbsp parmesan cheese

STEP 1:

 

Preheat oven to 400 degrees.

STEP 2:

 

Slice the zucchinis into ¼ inch rounds and put into a large mixing bowl.

STEP 3:

 

Add the oil, wine, garlic, lemon juice, salt and pepper. Toss well.

STEP 4:

 

Arrange ½ of the zucchini evenly in a 13x9 baking dish. Top with ½ of the sauce and then ½ of the mozzarella cheese. Repeat for second layer.

STEP 5:

 

Add any of the remaining juices from the bowl evenly over the zucchini.

STEP 6:

 

Sprinkle top with the basil and parmesan cheese.

STEP 7:

 

Bake, covered, for 35 minutes and then uncovered for an additional 10 minutes. Enjoy as a side dish or main meal with a salad or over pasta.
