Recipe Ingredients

1 red pepper, diced
2 tbsp jalapeño, finely diced
1 tbsp of Smart Balance Omega-3 Buttery Stick
1 lb of shrimp, cooked and diced
1/4 tsp salt
1/2 tsp pepper
16 oz light cream cheese
1/2 cup Smart Balance Omega Plus Light Mayonnaise
1/2 tsp oregano
1 tbsp parsley
1/8 tsp onion
1/8 tsp garlic
1/2 cup light shredded cheddar cheese

Recipe Steps

Preheat the oven to 400 degrees.

In a pan, sauté the red pepper and jalapeño with the butter for 2 minutes. Add the shrimp, salt and pepper and cook for an additional minute. Remove from the heat.

In a large bowl, add the rest of the ingredients and stir well. Fold in the shrimp mixture.

Transfer to an oven safe dish and bake for 25 minutes until bubbly.
