Recipe Ingredients
Smart Balance® Omega Non-Stick Cooking Spray
1 onion, chopped
1 celery stalk, chopped
1 large carrot, grated
2 cups cooked whole grains such as barley, quinoa or spelt
½ cup pureed tofu (or 1 egg)
1 tablespoon chopped sage
Recipe Steps
Heat oven to 375 degrees.
Heat skillet over medium-high heat. Spray with cooking spray. Add onion and cook until browned and transparent, stirring often, for about 10 minutes.
Add celery and carrot. Continue cooking for two more minutes.
Mix grains with onion mixture.
Combine tofu or egg with sage and half the grain mixture in food processor. Process for one minute.
Combine the two grain mixtures.
Spray a six-inch frying pan with cooking spray. Fill with stuffing.
Bake for 20 to 30 minutes, until browned
Serve immediately.
