Ingredients: 

2 lbs turkey breast
1/2 cup Smart Balance® Omega Plus™ Light Mayonnaise Dressing
1 tbsp chopped shallots
1/2 cup cranberries
6 tbsp chopped pecans
1 tsp kosher salt
1/4 tsp fresh ground pepper

STEP 1:

 

Poach turkey breast in a small pot, with enough water to cover the turkey. Add salt and pepper and bring to a boil.

STEP 2:

 

Reduce to a simmer and cook 5 minutes; remove from heat, cover tight and let it sit for 25 to 30 minutes or until thickest part of the breast registers 160° F.

STEP 3:

 

Let it cool and cut into small cubes.

STEP 4:

 

Combine turkey, Smart Balance® Omega Plus™ Light Mayonnaise Dressing, shallots, cranberries and pecans; season with salt and pepper.
