Tomato and Mozzarella Tower with Basil Oil

Ingredients: 

2 tbsp fresh basil, chopped
1 tbsp Smart Balance® Cooking Oil
kosher salt and fresh pepper to taste
1 medium ripe tomato
2 oz reduced-fat mozzarella, sliced into 3 slices
1 cup arugula

STEP 1:

 

In a small blender, combine basil, Smart Balance® Cooking Oil, a pinch of salt and fresh cracked pepper. Blend until smooth.

STEP 2:

 

Slice the top and bottom off of the tomato and discard.
Cut the tomato into 3 equal slices and season tomato with a pinch of salt, keeping the tomato intact to assemble the same way it was cut.

STEP 3:

 

Create a tower by layering the tomato, mozzarella and
arugula, and repeat until the tower is formed. Top with more fresh cracked pepper, and drizzle with Smart Balance® Cooking Oil.
