Tilapia with Fresh Herb Butter

Ingredients: 

Smart Balance® Cooking Spray
Four 6-ounce lean white fish fillets, such as Tilapia, halibut, or grouper, rinsed and pat dry
Paprika to taste
1/4 cup Smart Balance® Omega-3 Butter Blend Stick, softened
2 teaspoons finely chopped thyme
1/2 teaspoon finely chopped rosemary
1/4 teaspoon salt
1 medium lemon
2 tablespoons finely chopped parsley

STEP 1:

 

Preheat the oven to 400 degrees F. Line a cookie sheet with foil. Coat foil with Smart Balance® Cooking Spray.

STEP 2:

 

Arrange fish in a single layer on cookie sheet, lightly sprinkle with paprika, salt and pepper, lightly coat fish with Smart Balance® Cooking Spray and bake, uncovered, 12 minutes or until flakes easily with a fork.

STEP 3:

 

Meanwhile, in a small bowl, combine the Smart Balance® Omega-3 Butter Blend Stick, thyme, rosemary, and salt. Grate 1/2 teaspoon of the lemon rind and add to the Smart Balance® Omega-3 Butter Blend Stick mixture. Cut the lemon in 4 wedges.

STEP 4:

 

To serve, squeeze lemon juice over each fillet, sprinkle evenly with the parsley, and spoon equal amounts of the butter mixture on top.
