Tacos with Turkey and Mango

Ingredients: 

1 ripe mango, peeled, seeded and chopped
1/4 cup red bell pepper, finely chopped
2 tbs fresh lime juice
1 tbs fresh lemon juice
3 cups shredded leftover turkey
3 cups lettuce, shredded
1/2 cup Smart Balance® Omega Plus™ Light Mayonnaise Dressing
2 cloves garlic, minced


Prep Time: 

10 minutes prep + 30 minute rest + 10 minutes assembly

STEP 1:

 

In a medium bowl combine mango, red bell pepper, lime and lemon juices. Gently toss to thoroughly combine. Cover bowl and set aside to rest for 30 minutes before the next step.

STEP 2:

 

In a large bowl, add turkey, lettuce and the mango mixture and stir to combine. Distribute evenly among four tacos.

STEP 3:

 

In a small bowl, combine Smart Balance® Omega Plus™ Light Mayonnaise Dressing and minced garlic. Add a dollop to each of the tacos and serve.

looks like a great healthy recipe but my cholesterol is LDL bad - 209 level and this doesn't seem to be a good recipe for lowering cholesterol

why does this recipe say the cook time is 30 minutes, I don't see anywhere it says to cook?

Good point. The "prep time" now includes the preparation, resting time, and assembly.
