1 cup Smart Balance® Blended Butter Sticks
1 cup granulated sugar
1 large egg
2 1/2 cups all-purpose flour
1 tbsp lemon juice
1 tbsp vanilla
1 tsp baking powder
Preheat oven to 350°F.
Combine Smart Balance® Blended Butter Sticks, sugar and egg in large bowl; beat at medium speed until creamy.
Reduce speed to low; add all remaining ingredients blending on low speed until combined.
Divide dough into thirds; wrap tightly in plastic wrap.
Refrigerate until firm, about 2 hours.
On a floured surface, roll out dough to 1/4-inch thickness, working with one-third of the dough at a time, keeping remaining dough refrigerated.
Cut dough into desired shapes* and place onto ungreased cookie sheets, spacing them 1 inch apart. Decorate with colored sprinkles.
Bake for 12 to 15 minutes, until golden, being careful not to brown.
Cool 1 minute before removing from cookie sheets. Cool completely.
