Sirloin Steak with Balsamic Reduction

Ingredients: 

1/2 cup strong coffee or 1/2 cup water and 1 teaspoon instant coffee granules
2 tablespoons balsamic vinegar
2 tablespoons light soy sauce
1 tablespoon Smart Balance® Omega Oil
2 teaspoons Worcestershire sauce
1/2 teaspoon sugar
1/2 teaspoon black pepper
1/8 teaspoon dried pepper flakes
1 pound boneless sirloin steak, trimmed of fat

STEP 1:

 

Combine all ingredients except Smart Balance® Buttery Spray in a gallon-sized re-sealable plastic bag. Seal tightly and shake vigorously until well blended. Let stand 15 minutes at room temperature, turning occasionally.

STEP 2:

 

Heat a large nonstick skillet over medium high heat until hot. Coat the skillet with Smart Balance® Buttery Spray. Remove steak from the marinade (reserving marinade), cook 5 minutes, turn and cook 3 minutes longer or until very pink in the center. Place on cutting board and let stand 5 minutes before thinly slicing.

STEP 3:

 

Add the reserved marinade to the skillet. Bring to a boil over medium high heat, boil 4 minutes, or until liquid measures 1/4 cup, scraping bottom and sides occasionally. Hold a fine mesh sieve over a small bowl, pour the sauce through the sieve and using the back of a teaspoon, press down to release any excess liquid. Spoon sauce over the beef slices. Sprinkle lightly with salt, if desired.
