A healthy and light one pot meal, great served over brown rice.
1 red pepper, diced
8 oz low sodium corn
2 zucchinis, diced
½ tsp salt
½ tsp pepper
2 tbsp Smart Balance Omega Oil
2 lbs shrimp, peeled and deveined
¼ tsp onion powder
¼ tsp garlic powder
½ tsp oregano
½ tsp parsley
¼ tsp smoked paprika
14 oz can Italian cherry tomatoes
1/2 cup dry white wine
5 minutes
20 minutes
Serves 8

STEP 1: |

In a large pan add the red pepper, corn, zucchini, salt, pepper and oil and cook over medium high heat until softened, about 5 minutes. Transfer to a dish and set aside. |

STEP 2: |

|
To the same pan, add the shrimp, onion powder, garlic powder, oregano, parsley and smoked paprika. Cook until almost done, 4- 5 minutes. |
|

STEP 3: |
|
|
Add the tomatoes and wine to the pan, along with the zucchini mixture and simmer for 10 minutes until reduced. |
