This pudding is a one-dish breakfast. It’s delicious warm but equally good made in advance and served cold.

Ingredients: 

1 1/2 cups quinoa
2 cups Smart Balance® HeartRight® Fat Free Milk
2 tablespoons sugar
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
2 Smart Balance™ Omega-3 Grade A Natural Large Eggs
1/4 cup raisins
1/4 cup ground flax seeds

STEP 1:

 

In a medium pot add quinoa and cover with water. Bring to a boil and cook for 7 minutes, then drain and run cold water over quinoa.

STEP 2:

 

Return cooked quinoa to the pot and add Smart Balance® HeartRight® Fat Free Milk, sugar, vanilla and cinnamon. Bring to a boil stirring constantly.

STEP 3:

 

In a small bowl beat, Smart Balance™ Omega-3 Grade A Natural Large Eggs, then slowly add to milk mixture while whisking continuously.

STEP 4:

 

Immediately stir in raisins and return mixture to a boil, stirring constantly. Reduce heat to a simmer and cook for 10 minutes, stirring every 5 minutes. Serve.
