Large chunks of chicken and bell peppers prepared with Smart Balance Omega Oil, and a sweet and savory orange-ginger glaze. Yum.
FOR THE CHICKEN:
2 lbs. boneless skinless chicken breasts (cut into cubes)
1 ½ cups all purpose flour
1 Smart Balance egg (beaten)
¼ tsp. salt
¼ tsp. pepper
3 Tbsp. Smart Balance Omega Oil
2-3 Bell peppers
1 cup fresh or canned pineapples, cut into 1" pieces
FOR THE ORANGE SAUCE:
1 ½ cups water
2 Tbsps. orange juice
¼ cup lemon juice
⅓ cup rice vinegar
2 ½ Tbsps. soy sauce
1 Tbsp. orange zest (grated)
1 cup packed brown sugar
½ tsp. ginger root (minced)
½ tsp. garlic (minced)
2 Tbsps. green onion (chopped)
¼ tsp. red pepper flakes
3 Tbsps. cornstarch
2 Tbsps. water

STEP 1: |

1. Combine flour, salt, and pepper. Dip chicken in egg mixture and roll or shake in flour mixture. In cooking oil, saute chicken in batches at 375 F in wok until completely cooked. |

2. Meanwhile, in a large saucepan combine 1½ cups water, lemon juice, orange juice, rice vinegar, and soy sauce. Blend over medium heat for 2-3 minutes. Stir in brown sugar, orange zest, ginger garlic, red pepper flakes and onion. Bring to a boil. |

3. Combine 3 Tbsps. of cornstarch with ¼ cup of water and mix thoroughly. Slowly stir cornstarch mixture into sauce until it thickens. Pour sauce over chicken and garnish with green onions. Serve hot. |

Hi Jake - Sorry, I forgot that part!
Add the chopped bell peppers and pineapple to the cooked chicken before pouring the sauce on top. If you prefer your peppers cooked longer, saute in a separate pan to your liking (in a small bit of Smart Balance cooking oil), then add to chicken. Enjoy!!

This is a great recipe, but you did not say when and what to do with the pineapple and peppers!
