Ingredients: 

1 cup original buttery spread, softened.
1 1/4 granulated sugar.
1 1/4 packed light brown sugar.
2 Smart Balance™ Omega-3 Grade A Natural Large Eggs.
1/2 teaspoon pure Vanilla Extract.
1/2 teaspoon pure Almond Extract.
2 1/4 cups all purpose flour.
1 1/8 teaspoon salt.
1 1/8 teaspoon Baking Soda.
3 cups old fashion rolled oats.
1 1/2 cups golden raisins.
1 1/2 cups large regular raisins.

15 minutes


Cook Time: 

14 - 17 minutes

STEP 1:

 

Pre-heat oven to 325 degrees.

STEP 2:

 

Coat baking sheets with Omega Non-stick Cooking Spray.

STEP 3:

 

Beat sugars and buttery spread until fluffy.

STEP 4:

 

Beat in eggs, vanilla and almond extract.

STEP 5:

 

Beat in flour, salt and baking soda (that’s been sifted together).

STEP 6:

 

Stir in raisins, then oats.

STEP 7:

 

Form cookies using a scantily filled 1/4 cup measure. I use an ice-cream scoop with a squeeze handle.

STEP 8:

 

Place scoops of dough on cookie sheet. Flatten slightly and bake for 14 – 17 minutes or until golden.

STEP 9:

 

Let cool to the touch and place in zippered plastic bag.

STEP 10:

 

Note: If cookies spread too much during baking, chill unbaked cookies slightly on baking sheet before placing in oven.
