This is a hand me down breakfast recipe from my Mexican Mother-in-law. A Meal in one fancy scrambled egg dish.

4 Tbs. smart balance
8 corn tortillas
5 eggs
1 tomato chopped
soy sauce

5 minutes

STEPS:

 

Melt Smart Balance margarine in pan on low heat. Tear up corn tortillas into about 12 pieces each. You can tear more than one at a time. Put into pan and saute until soft. Mix eggs
in a separate bowl then pour over corn shells. Mix thoroughly stirring untill eggs are cooked- (about 2 minutes.) Add chopped tomato cooking another minute. Remove from pan onto a plate. Add soy sauce to taste.
