Recipe Ingredients

6 oz orzo
juice of 1 lemon
1/4 cup Smart Balance® Cooking Oil
salt & pepper, to taste
1 1/2 cups grape or cherry tomatoes, halved
1/2 orange bell pepper, diced
1/3 cup feta cheese, crumbled
1/4 cup pitted kalamata olives, sliced
1/4 cup chopped parsley

Recipe Steps

Cook orzo in a large pot of salted, boiling water until al dente. Drain and run under cold water, set aside.

In a small bowl, combine the lemon juice, oil, salt and pepper, to taste. In a large bowl combine the tomatoes, bell peppers, feta cheese, kalamata olives and parsley, then add the drained pasta.

Pour the lemon mixture over the pasta and mix well.

Serve cold or room temperature.
