A delicious one pot meal!
4 chicken breasts
2 tbsp Smart Balance Omega Oil
1 tsp salt
½ tsp pepper
1 red pepper
½ fennel bulb
½ red onion
4 yukon gold potatoes
2 tbsp minced garlic
1 cup dry white wine
2 tbsp pesto
1 tsp thyme
1 tbsp lemon juice
2 cups low sodium chicken broth
½ cup cream of chicken soup
10 minutes
75 minutes

STEP 1: |

Cut the chicken breasts into 1 inch pieces. Add to a Dutch oven or heavy bottom pot and toss with the oil, salt and pepper. Cook on medium high until browned, about 8 minutes. Transfer chicken to a plate. |

Meanwhile, cut the red pepper, fennel, onion and potatoes into 1 inch pieces. Add to the pot (after removing chicken) and cook until slightly tender, about 5 minutes. |

Add the garlic and white wine and cook for another 2 minutes. |

STEP 4: |

Return the chicken to the pot and any juices along with the pesto, thyme, lemon juice, chicken broth and cream of chicken soup and stir well. |

Cover and simmer on low for 1 hour, stirring occasionally. |
