My kids have always loved my Mashed Potato Puffs... Dad does too!
It's a fantastic, easy way to use up leftover mashed potatoes and now it's heart healthy with Smart Balance Omega Oil or Smart Balance Light Buttery Spread.
I usually mash up extra just so I can make Mashed Potato Puffs later in the week!
Leftover Mashed Potatoes
Salt
2-3 Tbsp Smart Balance Omega Oil or
Smart Balance Light Buttery Spread with Flax Oil

STEP 1: |

Melt Smart Balance Light Buttery Spread in a large skillet over medium heat. You can also use Smart Balance Omega Oil with crispy success too! |

STEP 2: |

|
Using your hands, form a small amount of mashed potatoes into a small puff ball about the size of a walnut, then lightly flatten in the palm of your hands. Place flattened puff in skillet and continue making and adding puffs while they turn golden on the bottom. Salt to taste. |

STEP 3: |

Flip puffs as they turn golden crisp on bottom, adding additional Buttery spread or oil as needed. Salt tops lightly. Multiple flips with very moist potatoes creates additional crispy spots. Dryer potatoes will crisp up like golden powder puffs! |

Serve hot with sweet corn dripping in melted Smart Balance Light Buttery Spread and a tossed salad dressed with Smart Balance Olive Oil and balsamic vinegar. Add reheated BBQ chicken for you non-vegans and poof! Thursday night leftovers are a delicious, quick hit! |
