1 teaspoon water
1 tablespoon shredded low-moisture part-skim mozzarella
1 7-inch corn tortilla
2 tablespoons prepared salsa

Spray 7- to 8-inch omelet pan or skillet with a light coating of Smart Balance® Omega Non-Stick Cooking Spray. |

Over medium-high heat, heat coated pan until just hot enough to sizzle a drop of water. Break and slip Smart Balance™ Omega-3 Grade A Natural Large Egg into pan. Immediately reduce heat to low. Cook until edges turn white, about 1 minute. |

Add water. Cover pan tightly to hold in steam. Cook 3 minutes. |

STEP 4: |

|
Sprinkle with cheese. Recover pan and continue cooking until white is completely set and yolk begins to thicken but is not hard. |

Place on tortilla. Top with salsa and lettuce. For ease in eating, lap edges of tortilla over egg to form a roll. |

Microwave: Omit water. Break and slip eggs into lightly greased pie plate, saucer or custard cup. Gently [filtered word] yolk with tip of knife or wooden pick. Cover with plastic wrap. Cook on 50 percent power just until egg is almost done, about 2 or 2 1/2 minutes. Sprinkle with cheese. Let stand, covered, until white is completely set and yolk begins to thicken but is not hard, about 30 seconds to 1 minute. Place tortilla on serving plate. Cook on full power until warm, about 15 to 30 seconds. Top with Smart Balance™ Omega-3 Grade A Natural Large Egg, salsa and lettuce. For ease in eating, lap edges of tortilla over egg to form a roll. |
