A nice lunch or a light dinner, this recipe is quick and easy to put together. You can tailor it to suit your needs with the vegetables that you use.
1 cup cubed cooked chicken breast
3/4 cup seedless grapes, halved
1/2 cup chopped celery
Fresh ground pepper
2 tablespoons Smart Balance Omega Plus Light Mayonnaise
1 teaspoon yellow mustard
1 teaspoon Dijon mustard
2 teaspoons honey
Splash of lemon juice
3 cups your choice of lettuce
1/4 cup cheese crumbles
2 tablespoons chopped walnuts
Croutons, if desired
15 minutes

it looks delicious i'll start bringing it to school with me but id recommend using plain honey mustard rather than two mustards and honey because you can buy light or fat free honey mustard already made.
