A salad, a meal, or appetizer!
Sauce:
½ teaspoon fresh ginger, grated (I use a microplane for small amounts of grating/zesting)
2 teaspoon grated onion
½ teaspoon garlic powder (this goes in the sauce)
1teaspoon soy sauce
1 tablespoon honey
1 teaspoon Smart Balance 50/50 Butter Blend
1/3 cup chicken broth
Tofu:
7 ounces firm to extra firm tofu
2 tablespoons panko bread crumbs
½ cup Smart Balance Omega 3’s Oil
2 teaspoons chili oil (Asian section) for mild heat, add more if need hotter
Pinch of garlic powder, salt, and dried parsley (to be put on the tofu)
Veggies:
6 whole asparagus
4 large cauliflower florets
10 small broccoli florets
6 whole snowpeas in shell
4 strips red bell pepper
30 minutes
15 to 18 minutes

The dipping sauce is a very strong flavor, so a little goes a long way. Also, tofu absorbs flavors, so be careful when seasoning it.

Blanch and cool the asparagus, cauliflower, broccoli, snowpeas, and red bell peppers, then set aside |

To make the sauce or salad dressing, melt Smart Balance butter in a small pan |

Add chicken broth, soy sauce, and honey, when liquids are hot remove from heat |

Next, add the grated ginger, onion, and garlic powder, mix well, set aside |

Drain and pat dry the tofu |

Cut tofu into ¾ inch cubes |

Put panko bread crumbs, a pinch of garlic powder, salt, and parsley into bowl and mix |

Add the tofu to the bread mixture and toss well |

Then, heat skillet with Smart Balance oil and chili oil |

Place breaded tofu into hot skillet and when side is lightly browned turn over to the other side. This procedure takes less than a few minutes |

When done, place tofu on paper towels to drain and cool |

Arrange veggies in serving bowl or plate |
