Lima beans are surprisingly good, give this a try!
1 large onion, diced
1 lb carrots, diced
6 stalks of celery, diced
2 tbsp Smart Balance Omega Oil
½ tsp salt
1 tsp pepper
6 garlic cloves, finely chopped
½ cup of dry white wine
1 lb smoked ham, diced
2 bags of large lima beans, rinsed
2 -28 oz cans of diced tomatoes
2 bay leaves
1 tsp garlic powder
1 tsp onion powder
5 1/2 quarts of water
In a large soup pot, add the onions, carrots, celery, Smart Balance Omega Oil, salt and pepper and cook over medium high heat for about 10 minutes. Add the garlic and cook for an additional 2 minutes.
Add the white wine, and stir to get all of the bits off the bottom of the pot. Cook for 2 minutes.
Add the ham, lima beans, tomatoes, bay leaves, garlic powder, onion powder and water. Stir well to combine all of the ingredients.
Let the soup come to a boil, and then reduce heat and simmer for about 2 ½-3 hours, until the beans are tender.
Serve with additional salt and pepper, and hot sauce if desired.
