Grills aren’t just for burgers! Fresh pesto will make your salmon quite the catch at your next party.
1 cup fresh basil leaves
1 clove garlic
1/4 cup grated Parmigiano-Reggiano
1/4 cup pine nuts
1/3 cup Smart Balance® Cooking Oil
6 (5 oz) salmon steaks
kosher salt, fresh pepper to taste
In a food processor or mini blender pulse basil, garlic, Parmigiano-Reggiano, pine nuts, salt and pepper until smooth.
Slowly add the Smart Balance® Cooking Oil while pulsing.
Sprinkle salmon with above mixture. Heat an outdoor grill or indoor grill pan over high heat until hot. Lightly brush the pan with Smart Balance® Cooking Oil and reduce the heat to medium-low. Place the salmon on the hot grill pan and cook 5 minutes on each side. Transfer to a platter and top each piece of fish with 1/2 tablespoon pesto.
