German Potato Salad

This recipe for German Potato Salad has been in our family for at least 4 generations. It is always a hit at family gatherings! There are never any leftovers, no matter how much I make... it's just that good!
Great Grandma made it with bacon grease! Yikes! Thanks to Smart Balance, this family heirloom is now heart healthy and has our family vegetarians/vegans smiling too! Serve it hot, but it's great at room temperature too and travels safely to picnics all summer! Revive it again for autumn or Octoberfest! Bon Appetit!

Ingredients: 

10 Potatoes (white, red or russet)
-or 1 large potato/person
8 oz frozen Green Beans
-more Green Beans is ok too
6 strips Bacon, fried and crumbled (optioinal)
1/2 Cup Vinegar
6 T Smart Balance Oil

30 minutes

STEP 1:

 

1. Peel, rinse and cut potatoes into
medium bite size pieces for potato
salad.

STEP 2:

 

2. Steam or Boil potatoes until tender,
about 18 minutes.
To Steam: Place 10" steamer in a large kettle and fill it with water to bottom of the steamer. Place cut potatoes in steamer, cover and bring water to boil, creating the steam. Fork will pierce potatoes easily when done.

To Boil: Place cut potatoes in a large kettle, cover with water, to an inch higher than potatoes, cover and bring to a boil on high. Reduce heat to Medium to maintain boil.
Fork will pierce potatoes easily when done.

Note: Steamed potatoes hold their shape better. But Grandma boiled them. If you don't have a steamer, just remove them from boiling water as soon as they are tender. Over boiled potatoes get mushy. Don't worry, I have used over boiled potatoes too. They taste great and I just tell everyone, "it's the creamy version!"

STEP 3:

 

3. Remove potatoes from steamer
and place in large, serving bowl.
If you boiled potatoes, drain potatoes and
then place in a large, serving bowl.

STEP 4:

 

4. Boil or Steam green beans.

To Steam: Add beans to the steamer, after removing the potatoes and steam til tender, about 15 minutes. Use the same water that was already in the steamer.

To Boil: Add Green Beans to a small sauce pan and cover with water. Cover pan and bring to boil, for about 15 minutes.
Note: You can cook green beans at the same time as potatoes to save time.

STEP 5:

 

5. Add green beans to potatoes.

6. While potatoes and beans are
cooking, saute or microwave bacon
til crisp. Drain and crumble.
Discard bacon grease.

Add bacon bits to potatoes and
green beans.
Note: For a Vegetarian/Vegan version, omit the bacon bits.
You can also divide the cooked potatoes and green beans into 2 bowls, add bacon to one bowl and keep the other for your Vegetarian/Vegan guests! Yay!

STEP 7:

 

7. Add 6 Tablespoons of
Smart Balance Oil to skillet and
heat til very hot. Per Grandma,
you know it's hot enough when you add
a drop of vinegar and it splatters a bit.
SO:
Carefully add 1/2 Cup Vinegar, because it will splatter, stirring til oil and vinegar have blended well and simmered a bit.
Pour hot dressing over Potatoes and Beans and Crumbled Bacon. Serve hot.

Note: You can make this the night before and reheat the next day. The flavors are enhanced! German Potato Salad stores serveral days in the fridge.
Note: I made this for my Vegan Friends and family, without the bacon, and it was a huge success. I couldn't keep the non-vegans away from it either!

I just made your German Potato Salad recipe and it was delicious. I skipped the bacon (I'm vegan) but to not miss out on the bits of crunchy flavor, I added 1/2 cup diced red onion.

I didn't have any white vinegar in the house so I used apple cider vinegar instead. Have you tried this? I'm guessing the result was much sweeter than the original.

Yes, I have used Apple Cider Vinegar. You're right! Cider vinegar adds a sweeter and fuller bodied flavor. It's great this way on a crisp, autumn day with baked apples and home made corn bread!
Red potatoes will also have a sweet flavor! I'm so happy you enjoyed this family heirloom. Hope you add it to yours!
