This whips up really quickly for a nice lunch or a light dinner. You could also serve it on croissants or in a pita.
1 cup chopped cooked chicken breast
3/4 cup chopped apple
3 tablespoons Smart Balance Light Mayo
1/2 cup chopped cantaloupe
3 tablespoons crumbled feta cheese
1 tablespoon chopped chives
1/8 teaspoon pepper
2 whole wheat 8 inch tortillas
1/2 cup shredded lettuce or spinach leaves
15 Minutes

There is wayyyyyyyyyyyy too much sodium in this recipe. Probably the cheese or maybe in the cooked chicken of which mine would have no salt in it!
