2 cups zucchini (slices)
1 dozen Smart Balance™ Omega-3 Grade A Natural Large Eggs (beaten)
2 cups grated mozzarella cheese (low-fat or regular)
1 8oz jar marinara sauce
1 bunch fresh basil, chopped
1 teaspoon Smart Balance® Cooking Oil

STEP 1:

 

Sauté zucchini in Smart Balance® Cooking Oil for 4–5 minutes.

STEP 2:

 

Add Smart Balance™ Omega-3 Grade A Natural Large Eggs and cheese.

STEP 3:

 

Cook, stirring until Smart Balance™ Omega-3 Grade A Natural Large Eggs are almost cooked; add marinara sauce and basil, continuing to cook for 1 minute.

STEP 4:

 

Serve hot with garlic bread.
