Ingredients: 

1 pound frozen stewing vegetables, thawed
Smart Balance® Cooking Spray
3 dried bay leaves
1 1/2 teaspoons dried thyme leaves
14-ounce can 99% fat free chicken broth
2 teaspoons Smart Balance® Omega Oil
4 chicken thighs, (about 1 3/4 pounds)
2 cups Smart Balance™ Fat Free Milk and Omega-3s & Vitamin E
1/2 cup frozen green peas, thawed
1/4 cup chopped green onion (white& green parts) or 1/4 cup chopped parsley
2 tablespoons Smart Balance® Original Buttery Spread
1 teaspoon salt

STEP 1:

 

Thaw stewing vegetables in the microwave according to package directions (or 2 minutes on high setting).

STEP 2:

 

Coat a 3 1/2 to 4-quart slow cooker with Smart Balance® Cooking Spray. Place the stewing vegetables, bay leaves, thyme, and all but 1/2 cup of the broth in the slow cooker.

STEP 3:

 

Heat the Smart Balance® Omega Oil in a large nonstick skillet over medium high heat. Brown the chicken, about 4 minutes on each side. Place the chicken in slow cooker.

STEP 4:

 

Add the remaining 1/2 cup broth to the skillet, scraping bottom and sides, bring to boil over medium high heat, and pour skillet broth into slow cooker. Cover and cook 3 hours and 15 minutes on high setting or 6 1/2 hours on low setting.

STEP 5:

 

Remove chicken from slow cooker, turning off the slow cooker. Remove chicken from the bones and return the chicken to the slow cooker with the remaining ingredients. Stir gently and let stand, covered, 15 minutes to heat thoroughly.
